Here is good news for all lovers of African American Cooking! The National Cancer Institute offers a 48 page booklet containing low-fat, high-fiber versions of traditional African American recipes:

A word or two about this publication:
Experts found that African Americans are suffering more often from serious illnesses like high blood pressure, heart disease, diabetes 2 and cancer, and often die earlier of these diseases. The problem, as explained in the introduction of the booklet, is not that the African American diet is so totally unhealthy. In contrast, it contains plenty of healthy foods, but they are often prepared with too much fat which then causes the health problems.

What makes this booklet great:
