Butternut With Green Pepper And Raisins

A tasty vegetarian recipe, low in fat, without any sugar added. The fruits give it a very interesting sweetish and fruity taste that you will enjoy.

Ingredients

  • 750 g butternut, peeled and cut into 2cm cubes
  • 2 tbsp. olive oil
  • 1 ½ red onions, sliced
  • 1 tsp. ground cinnamon
  • 1 green pepper, chopped
  • 90 g raisins
  • 90 g apricot jam
  • 90 ml orange or mango juice
  • salt and pepper to taste
Steps
  1. Cook the butternut in boiling water for 10-15 minutes until it is just soft. Drain and set aside.
  2. In the meantime, heat the oil in a large pan and fry the onions until golden. Add the remaining ingredients and bring to boil. Reduce the heat and allow simmering for about 5 minutes until the sauce has reduced to half of the original amount.
  3. Carefully stir in the butternut. Season with salt and pepper and serve with cooked rice.
Serves 4.

Tip
This butternut recipe also tastes delicious with fish or chicken. Simply divide the amount of ingredients in 1,5.
