Hawaiian Chicken With Curry Rice

Feel like a different way of preparing chicken? Try this sweet-sour chicken recipe, topped with cheese and baked in the oven!

Ingredients

  • 4 medium chicken filets
  • salt, cayenne pepper
  • 1 large pineapple (or 1 large can of pineapple rings)
  • 4 slices of low-fat cheese
  • 250 g brown rice
  • yellow curry
Steps
  1. Cook the rice according to the instructions on the packet. Keep in mind that brown rice will have to cook longer than white rice. When the rice is done, stir a tsp. yellow curry in well.
  2. In the meantime, preheat the oven on 200°C.
  3. Wash and dry the chicken filet, season with salt and cayenne pepper and place in a lightly greased ovenproof dish.
  4. Peel the pineapple, remove the core and cut 1 cm thick slices. If you use canned pineapple, drain thoroughly.
  5. Place the pineapple rings on the chicken filets and cover with the cheese.
  6. Cover the dish with foil and bake in the oven for 30 minutes. Then, remove the foil and grill for another 10 minutes until the cheese is slightly brown.
  7. Sprinkle a bit of yellow curry over the cheese and serve the chicken with the curry rice.
Serves 4.

Tip
As this recipe does not include a large portion of fruit or vegetables, you may want to add a fruity dessert, like a fruit kebab or ice-cream with fruit sauces.
