Ingredients
- 4 medium chicken filets
- salt, cayenne pepper
- 1 large pineapple (or 1 large can of pineapple rings)
- 4 slices of low-fat cheese
- 250 g brown rice
- yellow curry
- Cook the rice according to the instructions on the packet. Keep in mind that brown rice will have to cook longer than white rice. When the rice is done, stir a tsp. yellow curry in well.
- In the meantime, preheat the oven on 200°C.
- Wash and dry the chicken filet, season with salt and cayenne pepper and place in a lightly greased ovenproof dish.
- Peel the pineapple, remove the core and cut 1 cm thick slices. If you use canned pineapple, drain thoroughly.
- Place the pineapple rings on the chicken filets and cover with the cheese.
- Cover the dish with foil and bake in the oven for 30 minutes. Then, remove the foil and grill for another 10 minutes until the cheese is slightly brown.
- Sprinkle a bit of yellow curry over the cheese and serve the chicken with the curry rice.
