Ingredients
- 300 g rice, cooked
- 500 g chicken filet
- 1 red pepper
- 1 green pepper
- 1 small pineapple (or 1 can of pineapple pieces, drained)
- 80 ml lemon juice (if you use canned pineapple, you might want to use the pineapple juice instead)
- 2 tbsp. water
- 2 tbsp. brown sugar
- 1 tbsp. dry sherry
- 2 tsp. corn flour
- Start cooking the rice in your favorite way.
- Whilst the rice is cooking, wash the chicken filet and dry it with paper towel. Wash the peppers.Cut the meat into strips, about 1 cm thick. Heat a bit of oil in the pan and roast the meat for a few minutes until brown. Remove from the pan and set aside.
- In the meantime, cut the peppers into pieces, peel and cut the pineapple.
- Again heat a bit of oil and stir-fry the peppers for about 5 minutes. Then add the pineapple and stir-fry for another 3 minutes. Add the meat and stir until everything is hot.
- For the sauce (start as soon as you have some time), mix lemon or pineapple juice, water, sugar and sherry in a small pot. Bring to boil on moderate heat, frequently stirring until the sugar has dissolved. Mix the corn flour with 1 tbsp. water, add to the sauce and boil until the sauce thickens.
- Serve with the rice.
