Muffins With Carrot And Walnut Raita

Raitas are asian yoghurt dishes with vegetables or herbs. Here is a fat-reduced version of one of my favourites:

Ingredients

  • 35 g walnuts, chopped
  • 40 g raisins
  • 2 carrots, grated
  • 185 g low-fat yoghurt (plain)
  • 1 tsp. ground cardamom
  • 1 tsp. ground cumin
  • ¼ tsp. red curry powder or cayenne pepper
Steps
  1. Mix walnuts and raisins and set a few teaspoons aside for decoration.
  2. Mix all remaining ingredients thoroughly in a bowl.
  3. Cut 4 whole grain muffins in half, spread a teaspoon of the raita on each half and decorate it with the walnut-raisin-mixture.
  4. Store the remaining raita in the fridge in a closed container and use it up within a few days.
Tip
Alternately, you can serve the raita with whole grain rolls, break a piece of roll off and dip it the raita.
