Muffins With Carrot And Walnut Raita
Raitas are asian yoghurt dishes with vegetables or herbs. Here is a fat-reduced version of one of my favourites:
Ingredients
- 35 g walnuts, chopped
- 40 g raisins
- 2 carrots, grated
- 185 g low-fat yoghurt (plain)
- 1 tsp. ground cardamom
- 1 tsp. ground cumin
- ¼ tsp. red curry powder or cayenne pepper
- Mix walnuts and raisins and set a few teaspoons aside for decoration.
- Mix all remaining ingredients thoroughly in a bowl.
- Cut 4 whole grain muffins in half, spread a teaspoon of the raita on each half and decorate it with the walnut-raisin-mixture.
- Store the remaining raita in the fridge in a closed container and use it up within a few days.
Alternately, you can serve the raita with whole grain rolls, break a piece of roll off and dip it the raita.
