More Easy Healthy Recipes And Diet Tips

Hello everyone, let me apologize for not posting in ages but I'm busy with a big project that takes up most of my time now and doesn't leave time for blogging. I was very surprised when I checked my blog now and saw that the number of my followers has grown to a fantastic 8. Thank you so much for your interest, guys!

Now, there is something I feel I need to share with you. I just got an email from Matthew from FaveDietsBlog, letting me know he liked my blog and shared some of my cooking tips on his. I went to pay him a visit, and what I discovered was awesome.

FaveDietsBlog has its focus on diet and weight loss tips, healthy eating and mouthwatering healthy recipes. Here are just two posts that caught my eye:

Chicken recipes are great if you are in a hurry, since this meat is quick to prepare, and it's very healthy because low in fat. Matthew has got two great recipes on his blog, and links to more on his website.

Healthier Cheese Cake Is Delicious
Don't know about you but I love cheese cake. Fortunately, I'm not one of those who have to worry about calories, but since I got my own family to look after I'm much more conscious of healthy eating. This cheese cake recipe is low in fat by using fat free sour cream and cream cheese, and also leaves the option of replacing sugar with sugar substitutes, making it even healthier. Sounds like a cheese cake even dieters and diabetics could enjoy without having to feel guilty.

Low Carb Recipes - Tastiest Low Carb Recipes

A low carbohydrate diet means taking fewer carbohydrates. In such a diet, the intake of proteins and certain fats is increased and foods that have high content of carbohydrates are excluded. Foods such as Pasta, Noodles, Rice, and Desserts are high in carbs. In the 1990s Dr. Atkins started the high-protein and low-carb diet.

Some recommended low-carb recipes are as follows:

Spinach with spices

Ingredients

  • 2 pounds Spinach
  • 2 cloves garlic
  • 2 cloves
  • Half tablespoon white butter
  • A few fenugreek seeds
  • One stick cinnamon
  • Few seeds of crushed black pepper
  • Salt to taste
Method
Wash and finely chop spinach leaves. Add butter into a pan. Add fenugreek seeds, cloves, garlic, cinnamon, crushed pepper and stir for 2 minutes. Then add spinach and salt and cook on low heat for about 20 minutes.

Baked Fish

Ingredients
  • One pound fillet of fish
  • Salt to taste
  • Black Pepper
  • One teaspoon Olive Oil
  • One tablespoon lemon juice
Method
Marinate fish in olive oil and lemon juice. Add salt and black pepper. Take a baking dish and bake fish for 6 minutes.

Lemon Chicken

Ingredients
  • 2 breasts of chicken
  • 2 teaspoons ginger-garlic paste
  • One teaspoon Tomato puree
  • One teaspoon lemon juice
  • One tablespoon olive oil
  • Salt and black pepper to taste
Method
Marinate chicken breasts in all the above ingredients. Take a baking dish and bake chicken for 10-15 minutes. Garnish with coriander leaves.

The above recipes have low caloric value and are high in proteins. These can be accompanied with multi-grain or wheat bread and can be included as the main course of a meal. Caution should be taken not to be on extended duration of low-carb -diet as carbohydrates give energy. If people are in jobs that require high physical activity it is essential to have carbohydrates included in their meals. People with low physical activity can be on extended duration of low-carb diets.

Oriental Chicken With Curry Rice

This is a stunning chicken and fruit recipe you don’t want to miss. It’s very easy to make, low in fat and only contains healthy fruit sugar but no other sugar added.

Ingredients

  • 4 chicken filets
  • freshly ground black pepper, yellow curry
  • 2 tbsp. rape-seed oil
  • 200 g brown rice
  • 2 tsp. yellow curry extra
  • 1600 g fresh mixed fruit, cut into small pieces (e.g. peaches, pineapple, grapes, pears and cherries)
  • 250 g water
  • 1 tsp. cornflour
Steps
  1. Cook the rice according to the instructions on the packet. When done, mix it with the curry.
  2. Place the fruit with the water into a pot, cover and bring to boil. Allow it to simmer for about 10 minutes until the fruits are warm and soft. Mix the cornflour with a tbsp. of water, add to the fruits and boil for a short moment.
  3. Wash and dry the chicken filets and season them with pepper and curry. Heat the oil in a pan and bake the chicken for about 5 minutes on moderate heat, then turn around, cover and bake for another 5 minutes. It is done, when it feels firm if you press on it.
  4. Pour the fruit mixture over the chicken filets and serve with the curry rice.
Serves 4.

Tip
Alternately to fresh fruit, you can use 2 large cans of mixed fruit, or create your own special mix by choosing 4 small cans of your favorite fruits. This will go much quicker and enable you to prepare the whole dish in only half an hour. Just make sure that not too much sugar has been added to the fruit.

Spaghetti With Chicken And Garlic Sauce

This is a tasty low-fat spaghetti recipe that you will certainly love. It’s very easy to prepare, and if you have some leftover chicken that you can use it’s also very quick to make.

Ingredients

  • 300 g spaghetti (or 200 g whole wheat spaghetti)
  • 4 small chicken filets, grilled and cut into thin stripes
For the garlic sauce
  • 4 tbsp. olive oil
  • 4 garlic cloves, chopped
  • 1 tbsp. fresh parsley, chopped
For the salad
  • 1 small lettuce, washed and torn into medium-size pieces
  • ½ onion, chopped
  • 1 red and 1 yellow pepper, thinly sliced
  • 4 tbsp. lemon juice
  • 2 tbsp. low-fat yoghurt
  • ¼ tsp. salt, ½ tsp. black pepper
Steps
  1. For the garlic sauce, heat the olive oil in a small pan and fry the garlic until golden. Set aside.
  2. Mix lettuce, onions and pepper in a bowl. For the dressing mix lemon juice, canola oil and spices. Pour over the salad and mix carefully.
  3. Warm the chicken filet in the microwave or oven. Spread it over the spaghetti, pour the garlic sauce over it and serve with the salad.
Serves 4.

Spicy Chicken With Pumpkin

It’s a healthy, low-fat chicken recipe with a spicy flavor for all who like it hot, accompanied by tasty pumpkin with ginger.

Ingredients
1,6 kg chicken pieces

Marinade:

  • 3 tsp. crushed chilies
  • 3 garlic cloves, crushed
  • 2 tsp. brown sugar
  • 2 tbsp. soy sauce
  • 2 tsp. turmeric
  • 1 tbsp. lemon juice
Pumpkin:
  • 1 ½ tbsp. canola oil
  • 3 garlic cloves, crushed
  • 4 cm ginger, chopped
  • 1 red onion, chopped
  • 750 g butternut
  • 125 ml vegetable stock
  • 1 tbsp. lemon juice
  • salt and pepper
Steps
  1. Preheat the oven on 180°C.
  2. Mix the ingredients for the marinade. Wash and dry the chicken, place it in an ovenproof dish and spread the marinade on. Put the dish in the oven and bake for 30 minutes, then spread the remaining marinade on and bake for another 15-30 minutes until the chicken is done.
  3. Whilst the chicken is baking, peel the butternut and cut it into 2 cm cubes.
  4. Heat the oil in a large pan and fry garlic, ginger and onion for about 3 minutes. Add the butternut and cook on moderate heat for about 8 minutes. Carefully turn the butternut regularly.
  5. Then add vegetable stock and bring to boil. Reduce the heat and allow simmering for another 10 minutes until the butternut is just soft. Add lemon juice and season with salt and pepper.
  6. Serve vegetables with the chicken and rice.
Serves 4.

Hawaiian Chicken With Curry Rice

Feel like a different way of preparing chicken? Try this sweet-sour chicken recipe, topped with cheese and baked in the oven!

Ingredients

  • 4 medium chicken filets
  • salt, cayenne pepper
  • 1 large pineapple (or 1 large can of pineapple rings)
  • 4 slices of low-fat cheese
  • 250 g brown rice
  • yellow curry
Steps
  1. Cook the rice according to the instructions on the packet. Keep in mind that brown rice will have to cook longer than white rice. When the rice is done, stir a tsp. yellow curry in well.
  2. In the meantime, preheat the oven on 200°C.
  3. Wash and dry the chicken filet, season with salt and cayenne pepper and place in a lightly greased ovenproof dish.
  4. Peel the pineapple, remove the core and cut 1 cm thick slices. If you use canned pineapple, drain thoroughly.
  5. Place the pineapple rings on the chicken filets and cover with the cheese.
  6. Cover the dish with foil and bake in the oven for 30 minutes. Then, remove the foil and grill for another 10 minutes until the cheese is slightly brown.
  7. Sprinkle a bit of yellow curry over the cheese and serve the chicken with the curry rice.
Serves 4.

Tip
As this recipe does not include a large portion of fruit or vegetables, you may want to add a fruity dessert, like a fruit kebab or ice-cream with fruit sauces.

Stir-fried Chicken With Leek

Preparing a nice chicken meal can be so easy and quick with recipes like this one...

Ingredients

  • 600 g chicken filet
  • 2 leek sticks
  • 1 tsp. crushed chili
  • 2 tsp. ground ginger
  • 2 tsp. soy sauce
  • 1 tbsp. sweet sherry
  • 80 ml chicken stock
  • 1 tsp. corn flour
Steps
  1. Cut the chicken into small pieces. Cut the leek into thin rings and wash thoroughly.
  2. Heat a little bit of oil in a pan and briefly roast the chicken until brown. Remove from the pan and set aside.
  3. Again, heat some oil. Stir-fry the leek, ginger and chili for about 5 minutes on high heat. Add the chicken and heat it up.
  4. Add soy sauce and sherry. Dissolve the corn flour in the chicken stock, add it and bring to boil, continuously stirring, until the sauce thickens. Serve immediately with rice or pasta.
Serves 4.

Chicken With Lemon Or Pineapple Sauce

Love it fruity? Try this easy quick chicken recipe with a lemon or pineapple sauce!

Ingredients

  • 300 g rice, cooked
  • 500 g chicken filet
  • 1 red pepper
  • 1 green pepper
  • 1 small pineapple (or 1 can of pineapple pieces, drained)
  • 80 ml lemon juice (if you use canned pineapple, you might want to use the pineapple juice instead)
  • 2 tbsp. water
  • 2 tbsp. brown sugar
  • 1 tbsp. dry sherry
  • 2 tsp. corn flour
Steps
  1. Start cooking the rice in your favorite way.
  2. Whilst the rice is cooking, wash the chicken filet and dry it with paper towel. Wash the peppers.Cut the meat into strips, about 1 cm thick. Heat a bit of oil in the pan and roast the meat for a few minutes until brown. Remove from the pan and set aside.
  3. In the meantime, cut the peppers into pieces, peel and cut the pineapple.
  4. Again heat a bit of oil and stir-fry the peppers for about 5 minutes. Then add the pineapple and stir-fry for another 3 minutes. Add the meat and stir until everything is hot.
  5. For the sauce (start as soon as you have some time), mix lemon or pineapple juice, water, sugar and sherry in a small pot. Bring to boil on moderate heat, frequently stirring until the sugar has dissolved. Mix the corn flour with 1 tbsp. water, add to the sauce and boil until the sauce thickens.
  6. Serve with the rice.
Serves 4.

Sweet & Sour Pasta With Tuna

This sweet-sour tuna recipe with pasta is quick and easy to make and low, in fat.

Ingredients

  • 250 g pasta
  • 500 g canned tuna in water, drained
  • 2 red peppers, chopped
  • 2 green peppers, chopped
  • 1 large pineapple, cut into pieces
Steps
  1. Cook the pasta.
  2. In the meantime, drain the tuna. Chop the peppers and cut the pineapple into pieces.

Quick Salad Recipes

Quick recipes are the simplest and fastest to prepare. It is ideal for people who have no time to prepare a full meal. A variety of salad can be prepared with simple recipes and procedures that will only take a few minutes.

Here are some quick salad recipes:

Grilled Ham Salad
Grilled ham salad can be prepared in 15 to 20 minutes.

Ingredients:

  • 10 ounce of package salad green
  • ½ pounds totally cooked ham steak slices
  • ¼ cup of peach preserves
  • ½ cup honey mustard salad dressing
  • 1 ½ cup of cubed cheese
Prepare and heat the grill. Put the salad greens in a large bowl. Thoroughly brush the slices of steak with the preserves and put it on the grill. Cook in moderate heat for around 9 to 13 minutes. When it's hot already, turn the steak upside down and apply more preserves. Afterwards transfer the ham to a chopping board and chop it into cubes about 1 inch thick. Mix the chopped ham together with all the ingredients. It is now ready to serve. This quick salad recipe is ideal for 4 serving.

Pasta Salad
Ingredients:
  • 1 pack of pasta
  • Celery
  • Broccoli
  • Onions
  • Garlic
  • Cheese
  • Chicken
  • Salt
  • Spices
Ingredients for the salad cream:
  • 1 cup of mayonnaise
  • 2 tablespoon of wine
  • 1 clove of crushed garlic
  • 1 tablespoon of basil
  • Salt and pepper for a little taste
  • Yogurt
  • ¼ cup of salad oil
Boil the pasta noodles for 10 minutes. Drain the water from the noodles and allow it to cool.
While waiting for the noodles to cool down, chop the vegetables and make your salad dressing. When the noodles are already cool, add all the ingredients putting the salad dressing last. Mix all of the ingredients together. Store in the fridge for 1 and half hours before serving.

Broccoli Bacon Salad
Broccoli bacon salad is one of the traditional types of salad. In this quick recipe, we are going to use some red grapes as a replacement for raisins. If you want you can also include raisins or dried cherries.

Ingredients:
  • 24 ounces bags of frozen broccoli florets
  • 16 ounces bacon which is thick cut
  • 1 red onion which is chopped into fine pieces
  • 2 cloves of garlic
  • 2 cups of red grapes
  • ½ cup sliced almonds
  • 1 ½ cup of mayonnaise
  • ½ cup of yogurt
  • 1/3 cup of sugar
  • 3 tablespoons of apple cider vinegar
  • 1/8 teaspoon of white pepper
Boil water in a big pot. Put the frozen florets then boil. Remove the broccoli and dip in ice water and drain using a paper towel. Cook the bacon until crisp. Afterward, drain with a paper towel. Remove the excess fat on the pan. Add garlic with the red onions and then cook for 4 minutes and allow the vegetable to soften. Mix the broccoli, onions, garlic, sliced almonds, grapes and bacon in a large bowl. Mix it gently.

Use a small sized bowl and mix all the remaining ingredients using a wire whisk. Add the mixture to the salad while stirring it gently until all salad is coated. Store the salad in the refrigerator for 12 hours and then serve.

Indian Style Rice Salad

This is a great chicken salad that you can enjoy both warm or cold, just as you like. It's fairly low in fat and very easy to make.

Ingredients

  • 250 g rice
  • 500 g chicken filet
  • 250 g fresh mushrooms
  • 1 medium pineapple
  • 2 tbsp. raisins
  • Some tbsp. pineapple juice (or lemon juice)
  • 1 tbsp. yellow curry
Dressing:
  • 6 tbsp. vinegar or lemon juice
  • 1/3 tsp. salt
  • 1/3 tsp. sugar
  • 1 pinch freshly ground black pepper
  • 6 tbsp. oil
Steps
  1. Cook the rice.
  2. In the meantime, cut the chicken filet into pieces. Heat some oil in a pan and stir-fry the chicken for 5-10 minutes until brown. Set aside.
  3. Cut the mushrooms into slices and cook them for about 5-10 minutes.
  4. Cut the pineapple into pieces.
  5. For the dressing, mix all the ingredients.
  6. Mix rice, chicken, mushrooms, pineapple, raisins and dressing. Add pineapple juice and curry and mix well. Put the salad for at least an hour into the fridge before serving.
Serves 4.

Tip
The salad can be prepared in advance and kept in the fridge. If you are in a big hurry, you can take canned pineapple and mushrooms instead of fresh veggies. If you have some cooked chicken left, use this.

Sweet & Sour Noodle Salad With Chicken

A pasta salad of a different kind, using chicken, peppers and pineapple to create a sweet-sour flavor and fill you up with vitamins whilst keeping the calories low.

Ingredients

  • 250 g pasta
  • 500 g chicken filet
  • 2 red peppers, chopped
  • 2 green peppers, chopped
  • 1 large pineapple, cut into pieces
Steps
  1. Cook the pasta. In the meantime, cut the chicken filet into pieces.
  2. Heat a bit of oil in a pan and roast the meat for 5-10 minutes until it’s nicely brown. Stir occasionally.
  3. Chop the peppers and cut the pineapple into pieces.
  4. Drain the pasta and mix it with the other ingredients. Add a little bit of salt and freshly ground black pepper according to your taste.
Serves 4.

Tip
You can also replace the chicken by canned tuna in water. You don’t need to roast the tuna, add it to the salad as it is. Just remember to drain it before you use it.
